Dairy-free, Nut-free, Soy-free, Vegan 45
This Easy White Bean & Tomato Soup is packed with protein and leafy greens. It comes together in just 30 minutes! (vegan + gluten-free)
If there were only two words to describe this time of year, they would be busy and cold.
Everyone is bundled up and on the move, decorating their houses and looking for presents. I’m one of those people who puts off the looking for presents until the last minute. Actually, I just stopped to look at the calendar and realized Christmas is only two weeks away…looks like I’ve got some work to do!
I’m sure most of you are better prepared than I am but are still in need of a few quick and easy dinner ideas to have on hand in the middle of all of the holiday fun.This soup is just that.
It comes together in thirty minutes and is loaded with healthy veggies, protein-packed white beans, and soothing tomato broth to help keep you warm and your immune system strong.
It’s one of my favorite recipes to add to the meal plan when it starts getting cold outside and I’ve made it so many times that I don’t even have to think about what I’m doing as I make it. It’s just that simple.
It’s hearty and leaves you feeling satisfied no matter what time of day it is.
I like to add fresh greens and usually choose swiss chard or kale but something like spinach would also make a nice addition. For the pasta, you could use your favorite gluten-free brand if that suits your diet or fun shapes to make it kid friendly too!
If you’re like me and are craving soup for every meal right now (except breakfast, of course…unless oatmeal counts as soup) then hopefully this recipe will come in handy for you. Here’s to staying warm and healthy!

Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 yellow onion, diced
- 3 carrots, peeled and diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon crushed red pepper (optional-can add more/less to your liking)
- 1 bunch swiss chard/kale/spinach, destemmed and chopped
- 2 (15-ounce) cans white beans, drained and rinsed
- 1 (25-ounce) jar marinara or crushed tomatoes
- 4 cups vegetable broth
- 1/2 cup dry whole grain elbows (or other bite size pasta)
Directions:
In a large pot, warm the olive oil over medium heat.Add the onion and sauté for five minutes, then add the carrot, garlic, and seasonings (salt, pepper, and oregano) and continue to sauté for another five minutes. Add the kale to the pot and cook until it starts to wilt, about 5 minutes.Pour in the jar of marinara, vegetable broth, drained beans and red pepper, then bring to a boil.Reduce to a simmer and allow to cook for ten to fifteen minutes. In the meantime, boil a pot of water to cook your pasta as directed.Once the pasta is done, strain the excess water and then add it to the pot with the soup. Stir until well-combined and serve!

Actually, I made this just for you. My telepathic powers informed me you were in need of tomato soup.
FYI- it’s kind of like a tomato broth so if you want more of a tomato flavor, you may want to add a small can/jar of tomato sauce or tomato paste. I’m sure you would love to add ketchup but I’m not so sure how that would turn out. ;)

I finished my shopping but only because I have a drop dead deadline of Friday since I’ll be leaving for the holidays then! Plus I cheated and bought almost everything online! Like you said- it’s cold and busy!

I’ve made your lentil and lemon soup 3-4 times over the last couple of weeks (so good!) and I decided I should move on. So I had this tonight which didn’t disappoint. It was delicious. It feels so good eating food like this after over indulging during the holidays. What I like most is that I half the recipes and then I have ready made food for a couple of days (there is just me eating it.) and the flavours get even better. I love having greens in soups and that is something new for me. I will go on to try your other soup recipes too, as they all seem like they will be very good too. Eating well does make such a difference to how I feel. Thank you once more. I totally recommend this recipe.

Made this tonight for dinner. Instead of the marinara sauce I put roasted tomatoes in that I made a few wks ago from the garden. It turned out soooo good. It is a keeper. Next time I might leave out the noodles, don’t really need them. Thank you for the great recipe.

Great soup! We just started eating a plant based diet this past year and I’m always happy to find a recipe that my guys like. Since we don’t cook with oils, I just use a little water to cook the onions. Since I am not able to get to the store as much as I would like I keep a variety of frozen veggies on hand and simply used frozen carrots and spinach. I would have preferred fresh, but it was still good. I also substituted 10oz of tomato sauce and 15oz of diced tomatoes for the marinara sauce. It turned out very tasty and will be put in my soup rotation. Thanks so much!

This recipe looks great! Do you have suggestions for gf pasta that doesn’t fall apart in a soup? I find they’re ok for the first day, but when we eat leftovers or freeze some, the gf pasta practically disinigrates. I have had some success with cooking the pasta separately and adding it with each serving, but I prefer a one-pot soup.

Hi Amanda! The only one I have found to hold up well is this brand: https://www.bionaturae.com/gluten-free-pasta.html Just FYI- it contains soy.
Even still if I’m making soup I would probably cook it separate and add as needed to be safe. I much rather clean an extra pot then have a mushy pile of pasta soup. ;)

Fab recipe! Just made this soup tonight and it was super delish! I did use crushed tomatoes instead of marinara sauce and being a bit lazy-used Earthbound Farm 5 oz. organic power greens (baby chard, kale & spinach) instead of fussing with chopping greens. I did add the red pepper-we love spicy! Before serving-I added some fresh grated parmesan cheese to the soup. Thank you for this wonderful, easy, super soup recipe. Yum, yum, yummy! :)
