Have you ever thought of making healthy and easy baked eggs for your morning breakfast? I think is extremely convenient to bake these Ham and Egg Muffins or egg cups (whatever you like to call them) for six or more people in your family in just about 12 minutes rather than spending more time frying sunny side up eggs one by one. You can even grab one to go if you’re in a rush. The basic ingredients are eggs and ham. You can use lightly beaten egg with shredded cheese, mushroom, tomato or whatever you have in mind but I prefer to keep mine simple. **Today I’ve republished an old post with new pictures rather than create a new one. Ham and Egg Muffin
Healthy and easy baked eggs for breakfast or grab to go

Prep Time 5 minutes mins
Cook Time 12 minutes mins
Course Breakfast
Servings 6 egg muffins
Ingredients
- 6 large eggs
- 6 slices Ham - I used shaved Virginia ham, slightly more than 120g
- pinch of salt and dash of pepper
Instructions
Preheat oven to 200 degrees C.
Remember to grease oil or spray non-stick cooking spray into muffin tin, as eggs will stick.
Fit ham into each muffin hole. Crack egg into each piece of ham with a pinch of salt and dash of pepper on top.
Pop the muffin tin into oven and bake for about 12 minutes or 2-3 minutes longer if you want a well done or less for runny egg.
Let egg muffins cool for a few minutes, then remove them from muffin pan.

- 火腿鸡蛋玛芬
- 这是一款非常简单的早餐。只要有火腿,鸡蛋和玛芬盘,在十几分内就可以搞定, 在匆忙的早晨,再适合不过。
- 材料:
- 6个 大鸡蛋
- 6片 火腿
- 盐和胡椒粉,适量
- 做法:
- 预热烤箱至摄氏200度。
- 玛芬盘内抹油,这样可以预防鸡蛋黏在烤盘内。
- 将火腿片摆入玛芬盘内,打入鸡蛋,撒上少许盐及胡椒即可。
- 送入预热烤箱烤约12分钟或多2-3分钟将鸡蛋烤得更熟。
- 烤好后,让蛋玛芬在盘内待凉几分钟,便可取出上享用。

Hi Ann, is yr egg in room temperature? What if my egg from fridge…how long shld I bake them?

Hi Florence, my eggs are straight from fridge. As oven temperature varies, you've to monitor the baking time. My oven is quite hot so I only baked for 12 minutes.

Hi Ann, I saw Baking Diary making this two weeks back and wanting to try but didn't materialise. Today saw you using the Virginia ham to fit the muffin tray really is a brilliant idea!! My hands is ticker ..but right now can I have one please 😀

Ham cup?? This is extremely interesing and absolutely a good idea. Just a suggestion Ann, you may want to fill the unused muffin holes with some water, I reckon it is not good to heat the muffin hole empty.

Hi Jenny, I bought the shaved ham from Cold Storage. You can also use any type of ham you like.

I love making eggs in the basket..and I do make it just a bit different which will be hopefully in one of the posts-but I love the way you made it! So yummy, oh and by the way Virginia Ham is one my hubby's favorite deli salami. I am making this for him soon!

Yes you can. If your toaster is not hot enough you might need another 3-5 minutes to cook the egg muffin..

hi ann, i just made this for a lazy saturday lunch. i lined the base with a flattened bread, then placed ham, chopped roma tomatoes, a little creamed corn, added a whole egg, sprinkled some black pepper, dried parsley and topped with pizza cheeses. i baked according to your instruction and love how the eggs were soft cooked. i extended another 5 mins to another 2 of them coz my hb loves them well cooked. they are yummy and nutritious. thank you for sharing the recipe. 🙂

Hi,I just stumbled across this recipe while looking for some easy dishes to cook for breakfast! I LOVE how easy and yummy it looks and sounds… However, need some help from you – we do not eat ham.. 🙁 Could you suggest something else I can use to line my tray instead? It would be a great help! Hi Anita, you can use bread too. Roll the bread flat and fit in the muffin tin. Remember to grease the muffin hole.
